Recipe: Broccoli Salad

Broccoli Salad with cheese and onions

A yummy summer salad that uses interesting combination of vegetables, fruits and meats!

Broccoli Salad:

o   1 head of broccoli

o   6 to 8 slices cooked bacon, crumbled

o   ½ cup chopped red onion

o   ½ cup raisins, optional

o   8 ounces sharp cheddar cheese, cut into very small chunks

o   1 cup mayonnaise

o   2 tablespoons white vinegar

o   ¼ cup sugar

o   ½ cup halved cherry tomatoes

o   salt and freshly ground black pepper

Direction:

Cut off the large leaves from the broccoli stem. Remove the tough stalk at    the end and wash the broccoli head thoroughly.  Cut the head into flowerets and the stem into bite size pieces. Place in a large bowl adding the crumbled bacon, onion, raisins if using and cheese. In a separate bowl, mix the remaining ingredients, stirring well. Add the broccoli mixture and toss gently.
