Asian lettuce wraps are crunchy, light, healthy and full of flavors!
o 2 tablespoons vegetable oil
o 1 lb ground beef
o 2 – inch piece ginger, peeled and finely grated
o 2 scallions, chopped
o 2 cloves garlic, minced
o 2 tablespoons soy sauce
o 1 teaspoon red pepper flakes
o ¼ cup hoisin sauce
o ¼ cup chopped peanuts
o Salt and freshly ground black pepper
o 1 head Boston lettuce, leaves separated, cleaned and dried
Directions: Using a skillet over medium-high heat, add the vegetable oil and sauté ground beef until brown. Add in the ginger, scallions, garlic, soy sauce, red pepper flakes, hoison sauce and cook for 1 minute. Remove from the heat and mix in the peanuts. Season with salt and pepper, serve warm wrapped in lettuce cups. Enjoy!
